New York Restaurant Takes Diners Across India with Changing Menus

An Indian restaurant in Newburgh, New York, is developing an unusual approach to culinary tourism without requiring its guests to travel. The 100 Food Journey, located at 34 Plank Road in the Hudson Valley, changes its menu every 100 days, introducing diners to different regional traditions, ingredients and cooking styles from across India. Its latest edition, launched in October 2026, focuses on the transition from autumn to winter.

Entitled The Third Voyage: An Autumn-to-Winter Culinary Journey, the new menu combines traditional Indian recipes with seasonal ingredients and contemporary interpretations. The concept is designed to encourage repeat visits by offering a changing selection of dishes rather than maintaining a largely permanent menu. Each edition represents another exploration of India's diverse culinary heritage.

The restaurant opened in June 2026 and has already introduced a summer-themed second edition. Its third menu brings together specialties from several Indian regions, including Maharashtra, Rajasthan and Kerala. For visitors to the Hudson Valley, the concept offers a gastronomic experience that connects the region's changing seasons with the food traditions of the Indian subcontinent.

A Culinary Journey Through India's Regions

The autumn-to-winter menu places particular emphasis on aromatic spices, slow cooking and ghee, the clarified butter widely used in Indian cuisine. These ingredients are central to many traditional dishes associated with colder weather and family cooking.

Among the featured specialties are Mumbai Vada Pao, a popular street-food dish from Maharashtra, and Tellicherry Pepper Mussels, which draw on the distinctive pepper traditions of India's southwestern coast. Kolhapuri Chicken Rassa represents the robust cooking of Maharashtra, while Rajasthani Laal Maas introduces the rich, spicy meat preparations associated with Rajasthan.

Other dishes include Meen Pollichathu, a fish preparation associated with Kerala, Plantain Kofta Pumpkin Curry and 12-Hour Dal Makhani. The latter reflects the importance of extended cooking times in developing the texture and depth of traditional Indian lentil dishes.

Seasonal desserts complete the menu, including Pumpkin & Cinnamon Obsession and Cardamom Kiss, both incorporating ingredients associated with the restaurant's autumn and winter theme.

Executive Chef and Managing Partner Tarun Arora, who oversees the culinary programme, has more than 18 years of experience in international hospitality. His career includes senior positions at Pullman & Novotel New Delhi Aerocity and Andaz Delhi, as well as work with Carnival Cruise Lines in the United States. He has also participated in culinary masterclasses with French chef Alain Ducasse.

"As autumn gives way to winter, Indian kitchens come alive with the comforting aromas of slow-cooked dishes, warming spices and ghee, our beloved liquid gold," Arora said. "From cinnamon and cloves to cardamom and ginger, these ingredients bring richness, depth and warmth to the table. With our Third Voyage, we are celebrating generations of culinary traditions while creating new stories, one dish at a time."

A Different Destination Every 100 Days

The restaurant's changing-menu concept is intended to introduce diners to India's culinary diversity over a series of visits. Rather than presenting a single, fixed interpretation of Indian food, each edition explores different combinations of regional traditions and contemporary cooking.

Glaxon Geevarghese, Partner and Director of Brand and Strategic Impact, explained the idea behind the rotating programme:

"Most restaurants invite you back for your favorite dish. We invite you back to discover your next favorite. Our vision is to give guests a reason to rediscover Indian cuisine every 100 days. The address stays the same, but the destination changes. And thankfully, no passport, extra baggage or jet lag is required."

The culinary team combines traditional preparation methods with contemporary presentation. Thomas Varghese, Chief Culinary Operations, emphasized that the intention is to preserve regional cooking traditions while introducing new interpretations with each edition.

The restaurant also offers experiences beyond its main dining room. The Machaan is a private dining space inspired by a treehouse, designed for celebrations, family gatherings and other occasions. Its signature bar, Neelantara – Horizon of Blue, incorporates Indian spices, herbs and botanicals into contemporary cocktails.

These additional facilities extend the restaurant's concept beyond individual meals, positioning it as a venue for private events and themed dining experiences.

Culinary Discovery in the Hudson Valley

The 100 Food Journey's location in Newburgh places it within the Hudson Valley, a region north of New York City known for its historic towns, landscapes and food culture. The restaurant adds an international dimension to the area's dining options through a concept built around culinary exploration.

For travellers interested in gastronomy, the changing menu offers a reason to consider the timing of a visit. Unlike restaurants whose signature dishes remain available throughout the year, The 100 Food Journey introduces new selections approximately every three months.

The approach also allows the restaurant to present Indian cuisine as a collection of distinct regional food traditions rather than a single national cooking style. By bringing together dishes from different parts of the country, each edition introduces guests to ingredients, techniques and combinations that may be less familiar outside India.

Following its June opening and the introduction of its summer menu, the third edition marks the next stage in the restaurant's rotating culinary programme. Further menus are expected to continue the 100-day cycle, giving returning guests opportunities to discover additional aspects of India's regional gastronomy.
